I baked an apple, blackberry pie to celebrate the birth of my sister’s third girl, Finney Louise Webb. I was blessed to get to see the sweet new baby born on January 18th. Though Finney won’t actually be able to eat the pie, I promised her I would bake her another one for her 1st birthday.
Baby Finney Apple Blackberry Pie
Ingredients
Crust
Filling:
2 Granny Smith apples
2 Golden Delicious apples
1 bag frozen black berries or 2 cups fresh blackberries
1/2 cup sugar
2 tablespoons butter
Preheat oven 375 degrees. Prepare crust and press into 9 inch pie dish. Peel and slice apples into small pieces. Stir all other ingredients in a bowl and then transfer to pie. Use another pie crust to make lattice for top. Bake for 45 minutes to an hour.
The black berries in this pie tend to make it a bit tart. This pie is best served with a little vanilla ice cream.
