Key Lime Pie in a Jar

St. Patrick’s Day called for Key Lime Pie in a Jar.  This was really easy to make (no baking!) and tons of fun to eat.  I do plan to make a real Key Lime Pie at some point, but this was a fun choice to celebrate the Irish holiday!

Key Lime Pie in a Jar

  • 1/2 box Vanilla Wafers
  • 16 ounce cream cheese, softened
  • 3/4 cup key lime juice
  • 1 14 ounce can sweetened condensed milk
  • 1 teaspoon freshly grated lime zest
  • 1-2 cup Cool Whip
  • green food coloring
1.  Crush Vanilla Wafers in blender or food processor
2.  Combine cream cheese, key lime juice, and sweetened condensed milk in mixer.  Blend until smooth. Add food coloring if you want it to look bright green.  
3.  Layer small jars or glass cups with Vanilla Wafers, key lime mixture, and then Cool Whip
4.  Continue building layers until cup is full.
5.  garnish with a little clover
