I am allowed to call this pie Chubby Hubby Pie because my husband is anything but. His favorite food is chocolate everything so I decided to make this chocolate truffle pie for his birthday. His mom makes a delicious silk chocolate pie that I plan to make sometime soon, but this celebration (also Friday the 13th) seemed to call for a rich indulgence. Easy to make, this pie is a rich treat for the finale of a meal. It would probably go nice with a cup of black coffee.

Chubby Hubby Chocolate Truffle Pie
Chocolate cookie crust (see crust recipes)
8 ounces Baker’s chocolate (1 box)
1 1/2 cup heavy whipping cream
1 tbs. vanilla extract
1/2 cup confectioner’s sugar
Prepare crust and press into a 9 inch pie dish.
Place Baker’s chocolate and half of the whipping cream into a microwave safe dish. Heat high for about 3 minutes stopping to stir once or twice. When melted, stir well and add confectioner’s sugar and vanilla extract. Set aside.
Pour remaining whipping cream into mixer and beat until stiff peaks form (about 5min).
Slowly stir in chocolate mixture being careful not to over mix.
Pour everything into pie crust and chill for 8 hours.
Serves 8-10 (a little goes a long way with this rich pie!)
