Broccoli Cheddar Rustic Pie

We bought too much broccoli.  Actually, this happens quite often.  I buy some of the things we need, i.e. milk, toilet paper, coffee, and bread, and David also buys these things.  Toilet paper is easy to stack in the bathroom, but broccoli cannot sit in the fridge for too long without being eaten.  And no one can eat as much broccoli as we bought the other day.  So, naturally, I had to make a pie.

I have seen rustic pies like these that are simple and beautiful looking and thought now is a good time to try one.  Turns out they are really simple to make and I am thinking that you could put just about anything in the middle of one of these and it would be tasty.  Ok, you probably could not put toilet paper in the middle, but anything edible would be great.

Broccoli Cheddar Rustic Pie

1 pie crust either home made or store bought.

3-4 cups broccoli chopped

1/2 chopped onion

2 cups shredded cheese

3 eggs

1 garlic clove finely chopped

1 egg white 

Preheat oven 350 degrees.  Roll out pie crust onto an un greased cookie sheet.  Mix all ingredients in a bowl.  Spread the mixture in the center of pie crust and then gently fold sides around sort of like an envelope.  Brush with egg white and place in the oven and cook for about 30-45 minutes.  It is best served hot.
