This is my favorite time of year. Sure, it may be 100 degrees outside, but the blueberries, peaches and blackberries are ripe and pretty soon the tomatoes will be too. Summer fruits and veggies are great, and they are especially perfect when you can pick the produce right out of your yard.
These pies were inspired by some amazing Georgia blueberries and peaches I bought at a produce stand. Topped with whipped cream or frozen yogurt, this is the perfect summer dessert!
Blueberry Peach Mini Pies
Prepare crust and press into small 3-4inch round pans. For a time saver, buy mini pie crusts already in the aluminum pans ready to go.
Filling:
5 cups peaches, peeled and chopped
2 cups blueberries
3 tablespoons corn starch
1/2 cup sugar
1/2 stick unsalted butter melted
Mix all ingredients in a bowl and then pour evenly into 4-5 small pie shells
Cook on 375 for 30-45 minutes
Serves about 8
