Pizza Pie with Heirloom Tomatoes

Once again, I am finding use for the ubiquitous summer tomato.  We love pizza at our house, so this is always a popular choice.  Homemade pizza with fresh tomatoes and fresh basil is hard to beat!

Pizza Pie with Heirloom Tomatoes

For the Crust:
I use a bread machine to make my dough, but it really isn’t all that hard to make dough without out it by hand.  You just have to remember to check on it and kneed it a few times.  
2 cups all purpose flour (I like to use half white flour and half whole wheat flour)
1 tablespoon olive oil
1 tablespoon sugar
1/2 teaspoon salt
1 teaspoon yeast
For the sauce and toppings:
1 small yellow onion chopped
1 garlic clove minced
four large tomatoes diced
1 can tomato paste 
1/2 cup chopped basil
pinch of salt
1 large tomato thinly sliced
1 cup Fresh spinach
1 cup shredded cheese of choice (I like to use a little mozzarella and cheddar)
1 tablespoon olive oil
Preheat oven 400 degrees.  Prepare crust and toss and spread onto pizza pan.  Chop onions and saute with olive oil.  Add garlic, tomatoes, tomato paste, and basil.  Heat until sauce thickens.  Spread sauce onto dough.  Sprinkle cheese, spinach, sliced tomatoes and any other topping you wish.  Bake 45 minutes or until edge of crust turns light brown.  Makes about 8 pieces of pizza.
