About a year ago, my son got the idea to have a “cousins camp.” In his mind, he wanted to invite all his cousins (Beck 10yrs, Benji 5yrs., Ruthie 5yrs., Mary Mae 2yrs, and Finney 6 mos.) to come for a week at his house to play games, roast marshmallows, and sleep in a tent. I loved the idea, but a week was definitely too long. So we decided we would try just one day.
Of course, the day we chose happened to be the rainiest day of the summer. But we made the best of it and it was lots of fun. For dessert, I made an ice cream pie and wrote cousins camp on the top with tiny marshmallows (leftovers from a hot chocolate package).
Vanilla Ice Cream Pie with Oreo Crust
1 bag Oreos (I always choose mint if I can find them).
Quart of vanilla ice cream, softened
Choice of topping (leftover Oreos, chocolate syrup, M&M’s, chocolate chips, etc.)
Prepare Oreo crust by crushing 1 bag of Oreos in a food processor. Add 1 tablespoon of melted butter. Press mixture into a 9 inch pie dish and then place in freezer for 30min-1 hour.
Spoon ice cream into dish and smooth the top.
Add topping of choice.
