How has life gotten so busy? I was much better at keeping up with this blog four months ago. This fall has been FULL with both good and bad changes that have added extra busyness to our already busy schedule. Good news is that David loves his new job at the paper and I am loving my added job of teaching New Testament. We both feel we have the best jobs in the world which makes facing the hectic, challenging days exciting and fun. Mabry is adjusting better to Kindergarten and Jackson seems to love 2nd grade. They both are learning so much so quickly!
Though I have not been great about writing, I have continued to cook a pie a week. Here is one of my recent pies I made for dinner. The best part about these little hand pies is that they are super easy to make!
Mini Biscuit Pies
Ingredients:
Pilsbury buttermilk biscuits (or some other pre-made biscuit)
5 eggs
1/2 cup milk
1/2 cup onion chopped
1 cup vegetables (broccoli, spinach, peas, etc)
1/2 cup grated cheddar cheese
Grease muffin pans. Roll each biscuit flat and then press into muffin pan.
Mix remaining ingredients in bowl and then pour on top of biscuits. Bake for 30-45 minutes.
Serves 8
