Fairmount Orchard Apple Pie

One of my favorite fall traditions is going to Fairmount Orchard to buy apples and apple cider.  My kids like to pick out the apples and climb on the tractors that are always parked outside (probably are not supposed to do that).  Since I started this year long pie project, I have made several apple pies, but I keep going back to this basic recipe.  Made with good apples, this pie is hard to beat!

Fairmount Orchard Apple Pie

Preheat oven 450.

For the dough

(see pie dough recipe)

Press prepared dough into 9 inch pie dish.  For this pie, you may want to reserve some dough to make a top or cut into strips for lattice top.

For the filling:

5 cups apples, peeled and thinly sliced

1/2 cup brown sugar (if apples are really tart, may need a bit more sugar)

1/2 teaspoon salt

1 tablespoon cornstarch

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

Combine all ingredients in a bowl and stir until apples are well coated.  Spoon into pie shell and bake 45 minutes or until crust is light brown.
